About the event

Predictive Microbiology is the study of how microorganisms would react to certain environmental conditions, such as that temperature and pH, with the use of mathematical functions and the aid of specialized software. While it will never replace microbial analysis, predictive microbial models can narrow down possible outcomes when introducing changes in your processes leading to a more efficient validation process.

AREAS COVERED IN SESSION

  • Introduction to Predictive Microbiology
  • Brief Review of Food Microbiology
  • Microbial Modelling Approaches
  • Applications of Predictive Microbiology in the Food Industry
  • Illustration or Discussion of Actual Laboratory Experiments in Predictive Microbiology

ABOUT THE SPEAKER

Dr. Dalmacio is a Professor Emeritus at the University of the Philippines Los Baños (UPLB). She taught undergraduate, as well as graduate courses, in Microbiology and instituted a graduate course on Microbial Toxins. Aside from that, she co-instituted a graduate course on Predictive Microbiology and Modelling Applications in Food Safety. She is the co-author of laboratory manuals in Food Microbiology, Dairy Microbiology, and General Microbiology; and training manuals for food processors. small and medium enterprises (SMEs), sanitary engineers, ambulant vendors, and food handlers in cafeterias, restaurants, and catering services.
